Skillet Gnocchi Stix with Guacamole Dip

Ingredients

  • 1 large ripe avocado
  • 1/4 small red onion, finely diced
  • 1 small tomato, seeded (if preferred) and diced
  • 2 tbsp (30 mL) chopped fresh cilantro
  • 1 small lime, juiced
  • Salt and pepper (to taste)
  • 1 tbsp (15 mL) butter
  • 1 pkg (280 g) Olivieri® Skillet Gnocchi Stix™

Skillet Gnocchi Stix with Guacamole Dip

Instructions

  • Step 1

  • CUT avocado in half; remove and reserve pit. Score avocado and scoop into a shallow bowl. Mash with a fork.

    Step 2

  • ADD red onion, tomato, cilantro and lime juice and mix well; season with salt and pepper to taste.

    Step 3

  • PLACE pit back in the avocado to keep it from browning. Makes 1 cup (250 mL) guacamole.

    Step 4

  • MELT butter in a non-stick skillet set over medium-high heat.

    Step 5

  • ADD Olivieri® Skillet Gnocchi Stix™; sauté for 5 minutes or until gnocchi are golden brown. Remove from heat.

    Step 6

  • Serve warm gnocchi with guacamole dip on the side.

    Tasty Tip:

    Serve the Gnocchi Stix and guacamole with grilled chicken and peppers for a Fajita inspired dinner.

Tips for Storing Guacamole

After a successful gathering, a common dilemma is what to do with leftovers. Guacamole can prove tricky as the avocados are very sensitive and will begin to turn brown if left out for a few hours. Don’t fret! There are ways to ensure your guacamole stays fresh and tasty for up to 2-3 days after. Just follow these easy tips:

  1. Pour a thick layer of water over your guacamole.
  2. Cover with plastic wrap, but push it down as you cover to remove any pockets of air.
  3. Keep Refrigerated.
