Mediterranean Mushroom Lovers Ravioli
Ingredients
- 1 pkg (500 g) Olivieri® Mushroom Lovers Ravioli
- 2 tbsp (30 mL) olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup (125 mL) Kalamata olives
- 1/4 cup (60 mL) sun-dried tomatoes
- 4 cups (1 L) spinach
- 1/4 tsp (1 mL) each salt and pepper
- 11/2 cups (375 mL) tomato sauce
- 1/3 cup (75 mL) finely crumbled feta cheese
- 2 tbsp (30 mL) finely chopped fresh parsley
Instructions
PREPARE ravioli according to package directions.
Step 2
HEAT oil in skillet set over medium heat; cook onion, garlic, olives and sun-dried tomatoes for about 5 minutes or until slightly softened. Stir in spinach, salt and pepper; cook for 2 to 3 minutes or until wilted. Stir in tomato sauce; bring to simmer.
Step 3
POUR sauce over ravioli in serving dish. Garnish with feta and parsley.
Recipe Variation
Substitute goat cheese for feta cheese if desired.
