Mushroom Ravioli with Pancetta and Cherry Tomatoes
BOIL Olivieri® Mushroom Lovers Ravioli for 2 to 3 minutes. Drain.
SAUTÉ pancetta for about 4 minutes or until browned, crisp and delicious. Add cherry tomatoes and sauté until softened.
TOSS ravioli with pancetta, cherry tomatoes and olive oil until heated through and well coated.

To complement the earthy mushroom taste, the ravioli are tossed in a humble version of the traditional All ‘Amatriciana sauce. A simple skillet is prepared of olive oil, crispy pancetta and sautéed red tomatoes for more depth of flavour. To add a spicy touch don’t forget to sprinkle in red pepper flakes or sauté cayenne pepper with the pancetta. Create your own authentic Italian meal at home any night of the week.

The pancetta can be substituted for bacon, Canadian bacon, Italian sausage or another smoked sausage of choice. To make this a meat free meal, you can also substitute a plant-based alternative like additional meaty portobello mushrooms, smoked tofu or other varieties.
