Tortellini with Asparagus Shrimp
Ingredients
- 1 leek, washed and cut into half moons
- 8 asparagus spears, trimmed and cut into 1-inch pieces
- Olivieri® 3 Formaggi Tortellini 350 g
- 2 cups fully cooked shrimp
- 1/4 tsp red pepper flakes
- Olivieri® Creamy Rosé Sauce 300 ml
- 1 tbsp lemon juice
Instructions
SAUTÉ leeks and asparagus in hot oil until leeks are tender (3- 4 minutes).
Step 2
ADD shrimp, red pepper flakes and Olivieri® Creamy Rosé. Stir to heat through.
Step 3
BOIL Olivieri® 3 Formaggi Tortellini until perfectly tender (6- 8 minutes). Drain pronto.
Step 4
TOSS pasta with sauce mixture. Season to taste.
Step 5
SERVE immediately and prepare for compliments!

Recipe Variations
Ideally this recipe calls for asparagus and leeks, which have their peak season in the spring and summer months. However, if you’d like to make this throughout the year and cannot find asparagus, swap in broccoli florets, long broccolini or green beans.
If you prefer, swap in the fully cooked shrimp for cooked cubed or shredded chicken.
How to Cook Shrimp
Achieving the perfect texture of shrimp to add into this recipe is simpler than most would believe. Use fresh or frozen, but just remember that if you’re using frozen shrimp, place it in a colander and run cold water over the top to thaw them out. That should take about 5-7 minutes.
Prepare a large pan with oil or butter and place over medium heat so as not to burn them too quickly. When it’s warm, season with salt and pepper and place the shrimp in the pan. Cook to perfection, monitoring them until they turn pink and opaque.
