Cheese Gnocchi with Bacon and Brussels Sprouts
Ingredients
- 1 pkg (280 g) Olivieri® Real Cheese Filled Skillet Gnocchi
- 1/2 lb thick cut bacon, chopped
- 1 Tbsp butter, or reserved bacon fat
- 1 lb Brussels sprouts, trimmed and thinly sliced
- 1-2 Tbsp balsamic vinegar

- 1 FAMILY SIZE pkg (520 g each) Olivieri® Cheese Skillet Gnocchi™
- 1 lb thick-cut bacon, chopped
- 2 tbsp butter, or reserved bacon fat
- 2 lb Brussels sprouts, trimmed and thinly sliced
- 2-4 tbsp balsamic vinegar
Instructions
Add the chopped bacon to a non-stick skillet over medium heat and fry until crispy. Transfer the bacon to a paper towel lined plate. Drain the bacon fat from the pan and set aside.
Step 2
Add 1 Tbsp of butter (or reserved bacon fat) to the skillet. Add the sliced Brussels sprouts. Sauté the Brussels sprouts for about 5 minutes, or until tender-crisp (sauté for about 8 minutes if you want them to start browning).
Step 3
Remove the Brussels sprouts from the skillet.
Step 4
Add the gnocchi to the skillet and arrange in a single layer. Cook undisturbed for about 3 minutes, then flip and cook for another 2 minutes, or until heated through, brown and crisp.
Step 5
Add the bacon and Brussels sprouts back to the pan with the gnocchi and stir to combine.
Step 6
Add the balsamic vinegar and stir to coat.
Step 7
Serve immediately.
Tasty Tips:
To make the dish even more flavourful with a touch of acidity, you can add a splash of white wine to the pan when you’re cooking the bacon and Brussels sprouts.
Consider garnishing with chopped fresh herbs such as parsley or thyme.
Substitutions
Olivieri® Real Cheese Filled Skillet Gnocchi is stuffed with delicious Emmental, mozzarella, and Comté cheeses. If you don’t have this product on hand, you can easily swap it out for our Fresh Classic Potato Skillet Gnocchi and add cheesy goodness with Gruyère, mozzarella, or fontina cheese. For a richer and more decadent dish, consider using Machego instead.
Other vegetables that could work nicely are mushrooms, onions, and carrots.
