Spinach Ravioli with Sausage & Mushrooms
Ingredients
- 4 Italian sausages
- 1/2 yellow pepper, thinly sliced
- 1/2 red pepper, thinly sliced
- 1/2 medium onion, thinly sliced
- 1 cup sliced mushrooms
- Olivieri® Chunky Tomato and Herb Sauce 600 ml
- Olivieri® Fresh Ricotta and Spinach Ravioli 600 g
Instructions
BOIL sausages for 5-7 minutes. Drain and set aside.
Step 2
SAUTÉ peppers, onion and mushrooms in hot oil until peppers are tender-crisp (2- 3 minutes).
Step 3
ADD Olivieri® Chunky Tomato & Herb sauce and stir to heat through. Turn heat to low and simmer.
Step 4
BOIL Olivieri® Fresh Ricotta & Spinach Ravioli until perfectly tender (3 -4 minutes). Drain pronto and add to skillet.
Step 5
SEAR sausages on all sides in hot oil until golden brown. Cut into ½ inch pieces.
Step 6
ADD sausage to pasta & sauce skillet and tenderly toss everything together!
Tasty Tip
Sprinkle parsley Parmesan and a pinch of love. Serve with a side of olives.

Other varieties of fresh ravioli can also be used. Simply omit the extra mushrooms, replace them with spinach, or keep them in if desired. However, for best results, we suggest using the designated ravioli variety in the recipe.
