Spinach Ravioli with Sausage & Mushrooms
BOIL sausages for 5-7 minutes. Drain and set aside.
SAUTÉ peppers, onion and mushrooms in hot oil until peppers are tender-crisp (2- 3 minutes).
ADD Olivieri® Chunky Tomato & Herb sauce and stir to heat through. Turn heat to low and simmer.
BOIL Olivieri® Fresh Ricotta & Spinach Ravioli until perfectly tender (3 -4 minutes). Drain pronto and add to skillet.
SEAR sausages on all sides in hot oil until golden brown. Cut into ½ inch pieces.
ADD sausage to pasta & sauce skillet and tenderly toss everything together!
Sprinkle parsley Parmesan and a pinch of love. Serve with a side of olives.

For a spicy kick, sauté the vegetables with red pepper flakes before adding in the sauce. For a creamier variety, use our Creamy Rosé, which is a tomato-based sauce with just a touch of cream.
If desired, capers and olives can also be tossed in.
Other varieties of fresh ravioli can also be used such as our Olivieri Artisan® Roasted Portobello Mushroom and Parmesan Ravioli. Simply omit the extra mushrooms, replace them with spinach, or keep them in if desired. However, for best results, we suggest using the designated ravioli variety in the recipe.
