Let your side salad steal the show for a dinner side or a show-stopping addition to a BBQ or potluck spread. With vibrant colours and amazing taste, it is definitely a dish that will impress.
To coat this pasta salad, we’re using our fresh tasting and bright Olivieri® Basil & Cheese Pesto. The bold and herbaceous flavour upgrades your dish automatically. Additional Pasta Salad Ingredients
While this pasta salad is perfectly simple and delicious on its own, if you’d like to beef it up with more vegetables, here are a few of our favourite additions: carrots, broccoli, red onion, bell or banana peppers, olives, cucumber and zucchini. Use what’s in season or what you have most readily available and of course, make sure to use extra basil and cheese pesto for everything to be coated evenly.
If you’d really like to take your pasta salad up a notch, instead of traditional potato gnocchi, use our skillet gnocchi varieties like Fresh Cheese or Tomato and Mozzarella. Note that if you use a filled variety, simply adjust the amount of added tomatoes and cheese to taste.
What is Bocconcini?
Small mozzarella cheese balls, bocconcini is semi-soft and ideal for adding a creamy bite to pasta salads as it comes ready and bite-sized. If you can’t find it at your local supermarket, simply use mozzarella pearls or sliced mozzarella.
Try it in place of mozzarella in these Caprese-inspired Tomato and Mozzarella Pesto Crostinis.
