Cheese Filled Skillet Gnocchi with Lemon, Ricotta and Asparagus

Ingredients

  • Olivieri® Fresh Cheese Filled Skillet Gnocchi 280g
  • 1 tbsp butter
  • 1/4 lb asparagus, cut into 2-inch (5 cm) pieces
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp canola oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup ricotta cheese, at room temperature

  • 1 FAMILY SIZE pkg (520 g each) Olivieri® Cheese Skillet Gnocchi™
  • 2 tbsp butter
  • 1/2 lb asparagus, cut into 2-inch (5 cm) pieces
  • 2 cloves garlic, minced
  • 2 tsp lemon zest
  • 4 tbsp canola oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese, at room temperature

Instructions

  • Step 1

  • MELT butter in T-fal 12-inch Nonstick Fry Pan set over medium heat; cook asparagus, pepper and garlic until tender-crisp. Stir in lemon zest; cover and set aside. Wipe frying pan clean with paper towel.

    Step 2

  • HEAT oil in same frying pan set over medium-high heat; cook Olivieri® Fresh Cheese Filled Skillet Gnocchi, stirring frequently until gnocchi are golden brown and cheese starts to ooze out.

    Step 3

  • TOSS gnocchi with asparagus mixture and Parmesan cheese.

    Step 4

  • DOLLOP with ricotta.

    Flavor Tip

    For added flavour, sprinkle with torn basil leaves before serving.

Cheesy Gnocchi Recipe

What really makes this dish show-stopping is the base of fresh gnocchi filled with a combination of three incredible cheeses like mozzarella, Emmental, comté and white cheese. Unlike traditional tender gnocchi, this skillet version is sautéed for a crispy outer shell with a soft and gooey cheesy inside. When combined with the spring asparagus and fresh flavours, it makes a wonderful meal to impress your family or dinner guests.

If you have trouble locating fresh asparagus, simply swap in snap peas, rapini, leeks, broccolini, kale or green beans.

Serve as a filling bowl on its own or pair with any meat cut of choice or extra vegetables. While this meal is naturally meat free, to add a bit more protein include salmon, cooked and crumbled bacon or shredded chicken.
