
Baked Salmon and Skillet Gnocchi
Step 1
PREHEAT oven to 375°F (190°C).
Step 2
WHISK 2 tbsp (30 mL) olive oil with lemon zest, lemon juice, salt and pepper. Set aside half of the mixture to use later.
Step 3
BRUSH the remaining lemon-oil mixture over the salmon. Top each fillet with two basil leaves and two lemon half-slices.
Step 4
BAKE on a parchment-lined baking sheet for 10 minutes. Turn oven to broil and cook for two additional minutes or until the fish flakes when tested with a knife.
Step 5
HEAT remaining olive oil in a large, nonstick skillet set over medium heat.
Step 6
ADD Olivieri® Classic Skillet Gnocchi™ and sun-dried tomatoes; sauté for 5 minutes or until gnocchi are golden brown and slightly crispy.
Step 7
ADD spinach to skillet; cover and cook, occasionally stirring, for 2 to 3 minutes or until spinach is wilted.
Step 8
DRIZZLE reserved lemon oil over skillet mixture; gently toss to coat.
Step 9
DIVIDE salmon between plates and spoon gnocchi-spinach mixture alongside the fillets.
