Lasagna Roll-Ups with Sausage Sauce
Instructions
PREHEAT the oven to 400F (200C). Grease a 12-cup muffin pan, and spoon 2 tbsp (30 mL) of sauce into each cup; set aside.
Step 2
COOK the lasagna sheets according to the package instructions; drain. Transfer the lasagna sheets onto a paper towel–lined baking sheet; lay in single layer.
Step 3
STIR together the ricotta, half of the mozzarella, salt and pepper. Spread the mixture evenly onto each lasagna sheet, and roll up the lasagna sheets into logs starting at one long end. Cut each log into 3 equal pieces, and then place the individual rolls in the muffin tin. Spoon the remaining sauce on top, and sprinkle with the remaining mozzarella.
Step 4
BAKE for about 20 minutes or until the cheese becomes golden brown and bubbly, and then sprinkle with basil.
Easy Lasagna Roll-Ups
With this simple recipe, you can make impressive lasagna roll-ups any day of the week, without having to wait for a special occasion. Using quality ingredients and a few shortcuts, like no-boil Olivieri® Fresh Lasagna Sheets, this dish can be on your dinner table in less than 30 minutes. Plus, the oven will do most of the heavy lifting for you!
One advantage of roll-ups versus classic lasagna is that they can be served right after baking as no resting time is needed. Also, the ingredients are spread over the lasagna sheet and then rolled, skipping the layering, which is the most time-consuming part of making a classic lasagna. If you are concerned about how the sheets will hold the creamy mozzarella cheese and ricotta mixture as well as the chunky Italian sausage sauce, use a muffin tin to help hold everything together.
Baking your rolled lasagna in a muffin tin, oven-proof ramekins or cupcake tray will help the pasta remain sturdy until baked to bubbly perfection. Make sure to sprinkle more cheese on top before popping in the oven for extra cheesy goodness.
Recipe Variations
If you are looking for a meatless dinner option, swap in Olivieri® Chunky Tomato & Herb Sauce for the Italian sausage sauce.
No fresh basil on hand? Sprinkle some dried herbs like oregano or basil for boosted aromas and flavour.
For a ricotta substitute, use cottage or creamed cottage cheese.
To switch things up, serve your roll-ups with a dollop of basil pesto or creamy alfredo sauce.
