
Cheese Filled Skillet Gnocchi with Lemon, Ricotta and Asparagus
Step 1
MELT butter in T-fal 12-inch Nonstick Fry Pan set over medium heat; cook asparagus, pepper and garlic until tender-crisp. Stir in lemon zest; cover and set aside. Wipe frying pan clean with paper towel.
Step 2
HEAT oil in same frying pan set over medium-high heat; cook Olivieri® Fresh Cheese Filled Skillet Gnocchi, stirring frequently until gnocchi are golden brown and cheese starts to ooze out.
Step 3
TOSS gnocchi with asparagus mixture and Parmesan cheese.
Step 4
DOLLOP with ricotta.
For added flavour, sprinkle with torn basil leaves before serving.

If you have trouble locating fresh asparagus, simply swap in snap peas, rapini, leeks, broccolini, kale or green beans.
Serve as a filling bowl on its own or pair with any meat cut of choice or extra vegetables. While this meal is naturally meat free, to add a bit more protein include salmon, cooked and crumbled bacon or shredded chicken.
