PREHEAT oven to broil and place rack in the top third of the oven.
MELT butter in a non-stick skillet set over medium-high heat.
ADD Olivieri® Skillet Gnocchi Stix™; sauté for 5 minutes or until gnocchi are golden brown. Remove from heat and spread in a small baking dish (or two single-serve dishes).
SPRINKLE gnocchi evenly with each of the cheeses. Season with pepper to taste.
BROIL for 2 to 3 minutes or until cheese is bubbly. (Watch carefully and rotate dish as needed).
MEANWHILE, return skillet to heat and add bacon; cook until crisp. Blot on paper towels.
USE kitchen scissors to slice cooked bacon; sprinkle over gnocchi and garnish with parsley (if using).
Add extra flavour and flair with additional toppings such as chopped green onion, pickled jalapeno slices, salsa, sliced olives, chopped pepperoni, crispy fried onions and/or whatever else you enjoy.
For a shortcut, replace the three individual cheese with a pre-shredded 3 cheese blend. Alternatively, replace any (or all) of the suggested cheeses with whatever nice melting cheeses already on hand.
